Pellaprat was one of the most influential French chefs and teachers of the twentieth century.
He was a founder of the Cordon Bleu cooking school in Paris and was responsible for many publications including the seminal work, L'Art Culinaire Moderne.
There are still many aspects of this book which are relevant today even though French cuisine has changed and adapted since the time this book was written.
