His energy is also staggering. Not only does he oversee three of the world's greatest restaurants (in Paris, Monaco and New York), he also has his name associated with many others in France, Italy, Tunisia, Hong Kong, Japan and elsewhere.
Not content with that, he is also a prolific publisher with a number of books to his name. We love his Provence of Alain Ducasse - one of the most useful guides to the wonderful foods of this region. Now, we are slowly working our way through the Grand Livre De Cuisine the enormous tome that sets out his food philosophy in immense detail.
And when we are in Paris we are entranced by Aux Lyonnais and his other bistros where traditional food are redefined.
