Okra is an interesting, even exciting, restaurant in Hong Kong that celebrates Japanese cooking techniques and Japanese sake. The owner, Max Levy, was born in New Orleans but has adopted a Japanese aesthetic and was able to perfectly match his intriguing dishes perfectly to his range of artisanal sakes.
Some examples of the food we ate that night include excellent house-made tofu and cherry tomatoes with Max's extraordinary sake match, its flavours reminiscent of the clear juices from strained tomatoes.
We were also blown away by the sushi rice from upstairs that didn't become sushi repurposed in a very excellent way in the kitchen downstairs. Seasoned and roasted, the base of the rice was as exactly as crisp as you would want it, just enough, and the unagi on top was a natural match. So tasty.
