Embla is both a bar and a dining space where the food is based around expertly prepared small plates and the wine is a roadmap to the natural wines of the world with many of the emerging Australian superstars being featured alongside the more familiar European gems.
The venue is operated by the talented team from one of our favourite Melbourne restaurants - The Town Mouse in Carlton. In the kitchen you will find clever chef Dave Verheu and directing the front-of-house team is highly experienced Christian McCabe.
We have only eaten here once so far and we were delighted with the food, the service and the wine selection. We worked through a snack of anchovy toast, some pickled mussels with dollops of a very well-made rouille, a nicely made terrine with just the right amount of fat to make it moist and flavourful, a plate of heirloom tomatoes to accompany a great dish of wood-roasted broccoli accompanied by sunflower seed miso and a dish of calamari topped with charred grilled cos lettuce lifted with buttermilk and a grating of bottarga.
The entire meal was packed with flavour and the service and pacing was spot-on.
Put into this mix a heady selection of natural wines from Australia (think Gentle Folk pink pet nat and Vin de Sofa) and beyond (for example, an orange wine called Emma from Azienda Agricola Farnea in the Colli Euganei region in the Veneto) to complete the package and you have a very happy place!
