Aloft (Aløft) occupies a prime waterfront location in Hobart's picturesque harbour. Here chefs Glenn Byrnes and Christian Ryan turn out complex dishes based on the very best local ingredients.
As you sit in this eyrie above the placid waters of the Derwent estuary you might glimpse a dolphin or shark or seal passing by below you. But when the food arrives you will forget about the view and thoroughly enjoy dishes such as the custard paired with roast pork where the custard is flavoured with kunzea, an Australian native plant, which provides a cavalcade of contrasting flavours and taste sensations in the one package.
Some of the dishes are accented by Asian flavours and cooking techniques such as coffee and condensed milk ice cream that takes us back to the kopi-tiams of Malaysia. You might also find spice flavourings that bring back memories of India or Singapore. But all the dishes will be delicious.
Also take the time to admire the black titanium cutlery which is unique on the restaurant scene and the plates made by talented local potter Ben Richardson.
