Tipo 00 in Melbourne's CBD is a fantastic addition to the restaurant scene. The food is classic Italian, the vibe is exciting and the wine selection is clever, straddling the line between the classics and the needs of the hipster generation. The service is sharp, the food excellent and you can drop in any time for a snack. In the evenings reservations are not taken at the bar so it is relatively easy to secure a seat.
We were delighted to find a wine from former Milano architect Gabrio Bini wine on the list! Bini is a giant among Italian natural winemakers. His vineyards are on the tiny island of Pantelleria which is also famous for the quality of the capers produced there (in fact, Bini also cultivates capers as well as grapes). The island sits in between Sicily and Tunisia, somewhat closer to the African coastline.
The dramatic arrow on the front label bears the inscription "Fanino Catarratto Pignatello" as well as the domaine name which is Azienda Agricola Serragghia (only the Serragghia appears on the label).
The name of the cuvee is Fanino and it is made of two grapes, namely Catarratto and Pignatello. The red grape that gives this wine its colour is Pignatello (also known in Sicily as Perricone). Pignatello is descended from Sangiovese and another unknown grape.
In this wine it has been blended with Catarratto which is a white grape that is extensively planted in Sicily. By adding the Cattarrato to the red wine Bini has produced a lighter wine that is more similar to a Jura red (his words as he was strongly influenced by the wines of Jura superstar Pierre Overnoy) which are always light, pale in colour and delicious.
Wines such as this which are light, deeply-flavoured and delicious are perfect for drinking right through a meal. And so it was.
 
     
 

Sliced ox tongue

We ordered two entrees. The first was thinly sliced Ox tongue enhanced with balsamic vinegar and lovely, tiny pink peppercorns, which were like a tardis to another era but deeply satisfying in this dish.

Octopus terrine

The other was an octopus terrine which was light, delicate and very, very flavoursome with dollops of amazing Vin Santo jelly, potato and tiny pieces of celery that added crunch. This was such a satisfying dish.

Risotto with stinging nettles and saltbush

But the best was yet to come. A dish of Riso Vialone Nano enhanced with stinging nettles and saltbush was one of the most amazing risotto dishes we have ever eaten - and we have had many! The pale green colour was alluring and the flavour was deep. A great dish!

Pappardelle with rabbit

Then there was pappardelle with rabbit, marjoram and hazelnut which was another amazing dish. We will definitely be back for more of this wonderful food.
