In George Town there is a famous Char Koay Teow hawker stall in Kimberley St just outside the Sin Guat Keong coffee shop. You will recognise it from the line of eager locals wanting a plate of 'true' Char Koay Teow. What makes it so good? First, very good flat noodles. Second, lovely morsels such as clams, small prawns, pieces of fish - just enough not to swap the main actor, the noodles. Third, and most important, just the right amount of heat to impart 'the breath of the wok'. The heat comes from a charcoal burner underneath the wok which has a jury-rigged fan to boost the heat when needed. This is an exciting venue.
