Petra and Hajo Tanck from Southern Sky Dairy are recent immigrants from Germany who have established a niche product made from Tasmanian-produced buffalo milk. The milk is sourced from Phillip Oates and Sheridan Lee at Preston on the North West Coast of Tasmania. They make their cheese at the Westhaven Dairy factory in Launceston and sell from the factory outlet there. They are currently making wonderful buffalo yoghurt, halloumi, buffalo Persian fetta, buffalo fetta and buffalo mozzarella.The factory outlet is open on Friday and Saturday and the cheese can also be found at Alps and Amici in East Launceston and the Trevallyn Grocer. They are also regulars at the Harvest market in Launceston on Saturday mornings.
