Surti undhiyu is a complex vegetarian curry dish from the Gujarat area of western India where the dominant cuisine is vegetarian. Some say that the best examples have up to 100 different ingedients and the dish must be cooked over a low heat for a long time to coax the best flavour out of the many ingredients.
Like many dishes from southern India this dish has both sweet and sour flavours.
An extra component of this dish is often a dumpling made from fenugreek leaves and besan flour. These are called muthiya .
