Chez Germaine is one of the best places to go to experience very well prepared Aligot - that amazing potato and cheese dish so beloved by the citizens of Aubrac and surrounding areas.
Here Adrienne Gros performs her daily ritual of serving her lovingly prepared dish to people who have driven across France in many cases.
Be warned that the village is somewhat off the beaten track. It is reached by driving for almost an hour from the A75 that runs through the centre of France. When we arrived at the restaurant a diner was coming out to check on his donkey which was tied up in front of the restaurant.
But once inside, the restaurant exudes warmth and charm in an old-fashioned way. Many of the customers are hikers having a break from the nearby pilgrimage route. The staff are very engaging and welcoming so it is definitely worth coming here if you are obsessed with this regional dish.
