Coconut vinegar is the Cinderella of vinegars. We all know about balsamic vinegar, sherry vinegar, rice wine vinegar (due to David Chang) and Champagne vinegar but coconut always seems to fall below the radar. However, it is a perfect mild vinegar for making pickled vegetables, especially pickled cucumber and other similar quick pickles.
To make pickled cucumber, put 30 grams of sugar in a bowl and pour a tablespoon of boiling water over it. Stir to dissolve. Add 100 mls of coconut vinegar and combine. Now slice some cucumbers very thinly and pour the vinegar mix over. In 10 minutes pour off the vinegar mix and serve with poached chicken, fish dishes or vegetable dishes that need an extra element.
