NOMA: Time and Place in Nordic Cuisine by Rene Redzepi chronicles the journey of Rene Redzepi and his promotion of Nordic cuisine through his Copenhagen restaurant, NOMA. It includes a fascinating diary he wrote when he travelled through the Nordic countries searchning for produce and ideas prior to opening the restaurant.
The photographs in the boook are stunning and serve the purpose of showing the way the food is presented as well as showing many of the products used in preparing the dishing ranging from bulrushes to ramson leaves.
