The Chairman is one of our favourite Chinese restaurants in Hong Kong. We love it for the brilliantly precise and focussed cooking here, the wonderful, caring service and the fact that we can drop in to nearby La Cabane á Vin to select a bottle or two of our favourite French natural wines to savour during the meal (and they go so well with the food served here).
On a visit to Hong Kong in November 2010 we were so impressed with an evening meal (especially the steamed flowery crab with ShaoXing rice wine, chicken oil and rice noodles) that we went back on our last day in Hong Kong for a lunch as well.
A visit in 2016 saw a different outcome. We again went to La Cabane a Vin for wine. Our favourite dish this time wasn't the crab but this Sichuan-ish dish of tripe and pigs ear with guava. A gentle amount of Sichuan pepper. But the guava was a brilliant counter to the other ingredients. Something almost agrodolce about it. We again ordered the crab but this time the sauce was just to winey!
