Giusto Occhipinti is the uncle of Arianna Occhipinti and runs his estate near Vittoria in the province of Ragusa in Sicily. Here, along with Giambattista Cilia and Pinuccia Strano (the first initial of their surnames forms the name of the estate) they craft their COS range of wines from the Frappato, Grecanico, Insolia and Nero d'Avola grapes.
Together, these winemakers have put the Cerasuolo di Vittorio DOCG appellation on the map through 30 years of hard work and experimentation. They leave the skins in during the fermentation process because, intriguingly, Giusto believes that the skins absorb oxygen in the same way as sulphur thus reducing the risk of the wine oxidising. For a special treat try the COS Cerasuolo di Vittorio Pithos which is aged in amphorae.
