Noques are dumplings made from a variant of choux pastry that are poached in water or milk and can be serveed as part of either a savoury or a sweet course. Noques a l'allemande see pork liver added to the dumplings and are served in soups. Noques a la Viennoise are served with custard as a sweet course.
