Le Bistro du Paradou is one of our favourite Provencal restaurants. Not too far from the iconic Les Baux the food here is true to its roots and attracts a loyal band of locals who dine here regularly. It has become a favourite on our regular trips to the area.
The egrarious host is well-known to locals and he works the room with a studied ease. In the kitchen his partner directs the small team that prepare the delicious food. She takes great care with every dish that is sent out.
We like the fact that a very good bottle of Cotes du Rhone Village (from negociants Tardieu-Laurent) is provided for each table. We also like the fact that very good Baux de Provence olive oil is available on the table. The tiled floor and rock walls provide atmosphere as does the huge bar that lines one side of the room. Bentwood chairs and marble topped tables ensure informality. The kitchen is open at the end of the room.
Our meal was a study in simplicity on the plate and complexity in the area of flavouring and seasoning. Whether it was the eggplant or the very good cassoulet, the food was perfect.
We are looking forward to our next visit.
