Wakame is one of the great success stories of recent times on the Tasmanian food scene. This edible seaweed was probably introduced to Tasmania through the discharge of ballast water by woodchip ships when they arrived off the Tasmanian coast. From what may have been an introduced pest, it's been turned into a thriving export industry. It is harvested for James Ashmore of Ashmore Foods Tasmania from waters just south of Triabunna, a small town on the east coast of Tasmania, and then naturally-dried using a chemical-free technique. The product has received certified organic status.
It can be found at City Organics in Hobart as well as Ashmore's Fish Market in Mornington.
