There are a lot of reasons to like the breads produced by the Sonoma Woodfired Baking Company. The first is the history of the of the Connole family who were bakers in Bellata in country New South Wales. The second is the fact that the family had the vision to fly to San Francisco to learn how to make natural sourdough from the legendary Bay Village Bakery. The third is that their ovens were built by another legend, Alan Scott, a Tasmanian who has gained cult status in the United States for his prowess at building wood fired ovens. Next they are willing to use less traditional grains such as spelt and kamut. Finally, they make very, very good bread.
We like to drop into the charming Orange Grove market in Sydney on a Saturday morning to buy a couple of loaves of this edible treasure.
