Breakfast is a meal that many places give little thought to. When we think of breakfast we think of those myriads of second-rate diners that infest the United States where they serve stewed coffee and lots of attitude, along with overcooked greasy eggs accompanied by bad toast with that pale substance referred to as butter.The only country to get it right most of the time is France where simplicity is the key. Good coffee and a simple croissant or baguette with good butter that tastes of the country.So, bills is an oddity because breakfast is their main game. People flock here for the chance to sit at the large central table and read one of the plentiful supply of magazines while savouring some of the most thoughtful breakfast dishes you are likely to find.The scrambled eggs here are a wonder of modern cooking. In fact, that dish alone should be enough to make you buy Bill Granger's book Sydney Food so that you can enliven your weekends with this masterstroke. And we have come to believe that all those eggs and the pile of cream that the recipe uses must be good for you when you see all the contented people who dine here!We also adore the ricotta pancakes with bananas and pieces of honeycomb-studded butter. These soft, flavourful pancakes redefine the meaning of the term!They also have a good lunch menu, but we always seem to get there in time for the breakfast.
