Chateau Unang is producing some fine wines in the Cotes du Ventoux appellation especially the Chateau Unang Cuvee Adeline which is a weighty yet crisp white wine that is perfect both as an aperitif and as an accompaniment to food such as grilled fish with a Hollandaise sauce.
We think that the management of the vineyard expresses itself in the final character of the wine and in this case the Rousanne element of the wine is managed to yields as low as 30 hectolitres per hectare which is quite low by the appellation standards. This inevitably produces better quality fruit. The quality is also affected by the position of the vineyard in the stunningly beautiful high valley floor of the River Nesque near the village of Malemort du Comtat. Here the grapes ripen slowly and need to be picked late in the season.
The grapes start their fermentation in stainless steel vats and are then finished off in new French oak barrels where the wonderful rounded mouth feel is developed.
