Inniskillin Canadian Riesling Ice wine is a luscious, sweet, late-picked wine that is both rare and very interesting.
To make ice wine, the grapes are left on the vine until the snow starts to fall in winter. This causes the grapes to freeze and thaw thus eliminating moisture from the fruit. This results in more concentration of flavour.
This wine is very sweet, but the sweetness is offset by a pleasing acidity that forms the backbone of the wine.
