Tempoyak is a condiment made from fermented Durian fruit in Malaysia. Its earthy, pungent flavour immediately won us over when we first tried this wonderful dish at the Seri Melayu restaurant many years ago. If you love durian fruit then the prospect of exploring the enhanced flavour when the fruit has been left to ferment thus concentrating the flavour is an opportunity you should not miss.
