Agresto sauce uses verjuice as the base liquid and a combination of nuts to provide body to the sauce. It is a perfect match for barbequed chicken.
This sauce has probably evolved from an old technique for cooking beef in Italy where offcuts of meat were simmered in a liquid formed from crushed, unripe grapes and onion juice. This recipe has gradually been refined into the current day stracotto which now almost always uses white or red wine as the liquid.
