Tonburi is the term used to describe the dried seeds of a cyprus tree that grows in China and Japan. The seeds can be cooked until soft where they take on a similar texture to caviar and can be used in a similar way.
It is sometimes used at Tetsuya's restaurant in Sydney to enhance seafood dishes.
