Virginia ham is a great treat if you can find the authentic article and not the imitators. It has traditionally been made from razorback pigs that are fed a curious diet of peanuts and peaches - Virginia is, of course, a centre of peanut production. They are salt-cured and then smoked for a long time until they have achieved their distinctive flavour.
