Passatelli looks like 'fat' spaghetti, but the dough is created from breadcrumbs rather than flour. It is extruded from a special machine that looks rather like a potato ricer to form long strands. A popular dish in Bologna is passatelli in brodo where the passatelli absorbs the soup and swells to form the highly-flavoured backbone of the dish. A particularly good version is served at Trattoria da Gianni in that city. It can be bought at most food stores selling pasta in Bologna such as the popular Tamburini.
