Le Fournil de Merindol is a tiny bakery in a side street in the sleepy southern Luberon town of Merindol, however it is worth seeking out. Extraordinary care is taken with the preparation of the loaves produced here. Only organic flours are used (including spelt and kamut flours for some of the loaves). Special Guerande sea salt is used. The loaves are fashioned by hand and allowed to rise slowly to better develop their flavour.
Although the bakery is best known for its wonderful fougasse, we really like the chewy, textured baguettes that we drive across Vaucluse to purchase here.
