We were drawn back to Sydney because Claude's has changed hands. A new owner/chef (Chui Lee Luk) who had worked in the kitchen for some time with the previous owner, meant that we had to try the new offerings.
Let's cut to the chase! The food is as good as ever - in fact it is absolutely stunning. Our visit was not too long after a visit to some of the new, clever restaurants in Paris. The food we sampled on the night we visited Claude's was as good, if not better, than the food we had experienced in Paris. In fact, the entire dining experience was significantly better!
If Claude's was in the 16th arrondissement it would certainly display two Michelin stars and possibly three.
Our meal started with a glass of celebratory Champagne and a dish of gougere filled with duck liver cream. The cold richness of the pastries enlivened the Taittinger and rounded out the palate.
Then came the famous smoked salmon consommé! A demi-tasse of rich, salmon-flavoured broth was subtle and comforting. The impossibly thin blade of pastry that straddled the cup added texture, flavour and a sense of drama.
Dish followed wonderful dish with another highlight being the Wagyu beef that had been braised in pinot until it formed a gelatinous, heavenly mass.
And the desserts didn't disappoint either with the black velvet bombe providing a conversation stopper! The sticky, malty mass inside the ice cream was a taste sensation!
