Alléosse is a very special place. We first came across it on one of our excursions to the wonderful rue Poncelet market which we try to visit each time we are in Paris.The cheeses are always matured perfectly in their own cellars. (There are even different cellars for different types of cheese). It doesn't matter whether your taste veers towards a Bleu de Termignon from the eastern mountains, a very ripe brie or one of the perfectly matured reblochons that you can always find here.
