Woodbridge Smokehouse produces high quality smoked Ocean Trout and Atlantic Salmon using fish farmed in the cool waters around Tasmania. The Ocean Trout comes from the icy-cold waters of Macquarie Harbour near Strahan on Tasmania's West Coast.
The fish products are smoked with the skin left on thus reducing the amount of liquid lost during the smoking process. Another secret of the flavour is the use of some apple wood from the surrounding organic orchard in the process.
It is usually available at the Wursthaus Kitchen and Hill Street Grocer in Hobart.
