Flinders Island Meat is a processor of quality meats that conform to the written charter raised by dozens of farmers on magical Flinders Island. These farmers take advantage of the perfect pastures that are high in salt from the ever-present winds that blow from the west. The company is run by David Madden and his son James who is based in Melbourne and looks after the branding and marketing while his father keeps a close eye on the production side on Flinders Island.
They have a number of products including Flinders Island Pasture Fed Wallaby (which are culled by licensed shooters), Flinders Island Milk Fed Lamb and Flinders Island Saltgrass Lamb all of which grace the tables at some of Australia's finest restaurants including Attica, Vue de Monde, Grossi Florentino and Garagistes (now sadly closed).
