Nilgiri's has moved since we last reviewed it so we cannot comment on the look and feel of the new restaurant. However it should not be too long before we do as this is one of the restaurants in Sydney that we are always drawn to on our visits.As you enter, the staff seem pleased to see you. They whisk you to your table and immediately provide the month's menu which explains the delights that await.The problem we have is that we want to order every dish. There has never been one item that we haven't wanted to order!On our most recent visit the entrees started with the wonderful poori with pulisherry - perfectly puffed breads served with a side dish of green bananas cooked in buttermilk and served with black mustard seeds and fresh curry leaves. We also tried green prawns that had been marinated in chillies, cumin and lemon juice quickly cooked then served with lovely mild pickled cucumber.We then were tempted by the meen saar - fresh barramundi simmered in a tangy kokum broth. This had a deep, rich flavour that was immensely satisfying. A chicken dish cooked with tamarind, cumin, coriander and chillies also has a perfect flavour balance, as did a dish of sweet potato dumplings stewed in coconut milk and spiced with asafoetida, mustard seeds and fresh curry leaves.This is serious food indeed! We keep going back for the purity of flavours and the skill with which every dish is prepared.And by the way - they make one of the best dosai in the country!
