Banc is a pleasant restaurant in the seaside town of Swansea run by John Bailey (the chef) and his wife Lee who manages the front of house with charm and efficiency.
John Bailey is classically trained in the five star hotel tradition. Every now and then you can discern an element in a dish where he has been unable to tear himself away from his background. Maybe it is a heavily reduced jus on a meat dish or an ingredient that is placed for visual appeal rather than flavour, however these are becoming fewer every time we visit. The food is becoming cleaner and more assured and definitely more in tune with the region.
Whether we try a tartare of ocean trout or a sashimi of freshly-caught marlin or some locally-picked, stewed greengages we give thanks that John is at the helm of this local treasure.
