Racines in Paris has become one of our favourite places to eat and to sample excellent natural wines. The food here was strongly influenced by the owner Pierre Jancou who is of both French and Italian extraction and who cares passionately about the food and wine he serves here. Jancou has now sold Racines, but the new owners evidently intend to continue the formula.We were amazed by the quality of the Carerra lardo that had been cured in marble and the vegatables that had been picked from Alain Passard's garden. We were also highly imressed with the selection of natural wines available here. We enjoyed one of Eric Pfifferling's refined wines from the Tavel appellation and an edgy natural wine from Claude Courtois whose offerings were so good that they left a lasting impression of quality in our minds.The new owner, David Lanher, is keeping the Alain Passard connection by employing an alumi of Arpege, young chef Nicolas Gauduin. We are hearing very good things about his cooking and look forward to our imminent revisit. There is another Racines at 39 rue de l'Arbre Sec in the 1st arrondissement.Metro: Grands Boulevards
