Spring is well and truly up and running in the new premises in the 1st arrondissement of Paris. The new restaurant is a delight, with a couple more seats available, a spacious open kitchen and a lively atmosphere as delighted diners enjoy the precise and flavoursome dishes of chef Daniel Rose and his team.In November 2010 we had an excellent meal here which we shall write about in more detail once we have collected our thoughts and finished the current tour of eating establishments around the globe. The Spring meal, however, was one of the stand-out events of the current tour.We also enjoyed some great wines at this meal including the delicious Ulysse Collin Blanc de Blanc champagne, the elegant Antoine Arena Patrimonio Carco Vermentinu (Vermentino) and an amazingly lively Breton Bourgueil made in 1993 (who said natural wines don't last!).
