Lebrina Restaurant in New Town, Hobart is the showcase for the talents of chef Scott Minervini who is always on a quest to provide his customers with a better dining experience. However, his cooking remains soulful, produce-driven and rooted in tradition and technique, eschewing fleeting, fickle fads which seem to dazzle less experienced chefs.
The restaurant is housed in a charming old cottage in an inner-city suburb only a few minutes taxi ride from the centre of the city. The restaurant offers a short, interesting menu that is anchored in France and Italy.
It's complemented by Tasmania's best bread, baked each day in the wood-fired oven that was installed here to the delight of Hobart regulars.
It's also the little things that set Lebrina apart. Maybe its something as simple as the tiny parmesan biscuits that are sent out at the beginning of a meal or maybe tiny croutons with a perfect tapenade.
The care and attention follows through to the soup that might be a crystal-clear beef consomme with a faro pudding or a boned stuffed oxtail served in a deep white bowl with an optional dash of sherry. Anyone who has tried to bone an oxtail will appreciate the care and attention put into this dish.
You might begin with a double-cooked Heidi gruyere soufflé or a sensational seared local abalone dish served with Berkshire pork belly sitting on a salad of celeriac batons. This might be followed by a daube of lamb that has been cooked slowly in wine and served with a comforting cannelini bean puree or a roasted fillet of fish accompanied by a garlic and rosemary salsa and a cauliflower cream given texture with pangrattato. We always fish our meal with one of the memorable puddings whether it be the old favourite orange pudding or the vanilla bean version that we tried recently.
The service here is a particular feature of the dining experience. It is careful, caring and attentive. Wine is also treated with respect with staff willing to suggest perfect matches for the food to be served.
